Farfalle with Spinach, Bacon & Goat Cheese Pasta Recipe

4 slices bacon

5 cups of baby spinach, stems trimmed

2T olive oil

1T balsamic vinegar

1T red wine vinegar

1/4 tsp. coarse salt and pepper

1/3 c. farfalle pasta

Cook bacon and crumble. Place spinach, oil, vinegar, salt & pepper in bowl and set aside. Cook pasta aldente. Reserve a cup of cooking liquid, drain pasta. Put in bowl with spinach mixture. Toss until well mixed, add liquid of mixture if too dry. Garnish with bacon & goat cheese. Serve hot or warm!
